“Solamini et amicis”: for ourselves and our friends. Sauvignon grapes are dried naturally on cane racks for six months, pressed after March and then aged for 13 years in barrique; this wine was bottled in autumn 2021. All its sweetness is natural.
A wine to sip slowly on its own, or with dark chocolate, aged cheeses or foie gras.

Tasting notes
Colour
Bright, dense amber.
Nose
Intense, led by sultanas.
Palate
Delicate apricot, lightly tart and savoury, not overly sweet and very long, with acacia blossom and a light tannin.
Pairs with
On its own; pastries, foie gras, aged cheeses (try pecorino with chestnut honey), dark chocolate.
How it's made
Slow drying, light pressing and a first fermentation in steel, then the fermentation finishes in barrique, where the wine ages for 13 years.
